I'm going with Chuck Schuldiner on this one.

I'm quite partial to Nergal from Behemoth. He probably isn't the most technically fantastic, but he writes some amazingly epic riffs.
Second choice - Mikael Akerfeldt. Adds some blues and jazz to the metal (other bands with this attribute include Cynic and Atheist. Fantastic guitar work there)
