I like mozzarella, provolone, Parmigiano-Reggiano, feta and kefalotyri. The best mozzarella is Mozzarella di Bufala which is made from domesticated water buffalo milk. Also Grana Padano is the closest legitimate Italian cheese to Parmigiano-Reggiano.
I agree with you bacobit. I love pepper-jack cheese. It is spicy and it tastes like my second favorite, provolone. It is good melted and not melted. Of course, I've never eaten cheese in Italy except on pizza and other dishes.

i like munster. it is good in flavor and price. it is really good in a sandwich with sliced deli chicken or roasted turkey, lettuce, tomato and heinz salad cream. delicous.
Dubliner Cheese.. One reason is because its Irish. More viable though is that it has this bite too it that is really addicting. Also because its like chedder on crack and steroids at the same time.
Hmm... One cheese absolutely love. Goat Cheese. It's delicous, mellow, and it has the same colouration as Mozzarella, and alot more chewier, and richer. Very nice cheese.
Blue cheese is alright, just it hurts my gut if I eat too much.
I like cheddar as well. Mozzarella is alright, but not my favorite.
