Wex, not all Italian cheesecake is made from mascarpone.
# Italian-style cheesecake uses ricotta or mascarpone cheese, sugar, vanilla extract, and sometimes barley flakes. This type of cheesecake is typically drier than American styles. Often, small bits of candied fruit are added.

You do know that, that's Italian-style other styles use different cheeses like cream cheese.
I know there are in fact, two distinctly different versions of cheesecake, one is a cake; the other is pie. Thank you Wex Major and Koshionos, you're absolutely right. The cheese pie is more like a pudding and is made with cream cheese and whipping creme, the cheesecake is baked, using a springform pan. Wex Major, I like to use at least two different cheeses and I say the more the better. I will agree with TPM, that cheesecake is really a dessert since the cheesecake crumbs are of a different texture but a properly baked cheesecake should be the exact hight of the springform pan you're using and it should slice as easy as cake, not messy like pie.
I dont even like cheese so cheese cake has to be doing something right to make me love it. And I do think its more cake and not even close to a pie sometimes =p
