This is too difficult of a question for such a broad question about a broad universe. It would be much more helpful if you could be more specific. Here's my picks though.
Best Blademaster: Mace Windu. He created the Form VII Vaapad style to channel his love for battle into a powerful fighting style. Not only that, he was the only Jedi to remain uncorrupted by this style. He was able to single-handedly defeat Emperor Palpatine, when even such powerful duelists as Yoda could not gain an upper hand. Best Force User: This is a real toughie. For me, it's a four-way tie. First would be Cade Skywalker, a descendant of Anakin, Luke, and Ben. His connection was so powerful that he had to stifle it by consuming death sticks and he was able to revive people from the dead. Yoda is another, for fairly obvious reasons. Galen Marek from The Force Unleashed was another extremely powerful force user, using it in ways unseen before, and able to defeat Palpatine by blade and force. Finally, Anakin Skywalker, for the fact that just his conversion to and from the dark side was enough to disbalance and unbalance the Force single-handedly. Wisest: Yoda would be an obvious shoo-in, but I'd have to say I admire Obi-Wan Kenobi the most in this regard. Hottest: Oh, man, Serra Keto takes this one. Pretty obscure Jedi. Runner-up would be Mara Jade Skywalker, then Jaina Solo. Mmm... Kindest: Qui-Gon Jinn. He was considered a maverick by the Jedi Council because he always stood for what was right, and was willing to do anything to do it.
Qui-Gon Jinn is my favourite out of all of them, shame he didn't last very long in the movies (stupid maul). Not sure about the best 'cos I don't know much about Star Wars past watching the movies when their on TV at christmas but I suppose Obi-Wan is up there.

Personally my favourite Jedi is Kit Fisto. He has mastered form 1 of lightsaber combat-schii cho but compared to heavyweights like Windu he is small fry. His most notable achievement is probably the subdueing of General Druge, although in contrast to others this is pretty minor. I don't really know why I like him, I guess I have a soft spot for Nautolans. Ahh well.
