Honestly I'd have to say nothing. I've had this conversation with friends and I've come to the conclusion that I do not want any of my favorite old classics touched up and redone. Turtles in Time came out redone and reworked and I loved that game to death, when it was on the SNES. But it hasn't stood well in the test of time and the rework it got didn't do much for it. Honestly one of the biggest things those classics have going is that I play them under "Nostalgia goggles" which ups my enjoyment tenfold, take that away and I can't have the same enjoyment. So my answer is none
This is a good point. I often like to see old games with the old graphics and gameplay to see exactly how much it stands the test of time. It's fun for me to sound old and say things like, "F-Zero is just as enjoyable today as when it was new." and to hear my friend respond, "That game looks really old; like it was made for the Atari.".
I do like full-blown sequels to old games. I can't wait to play Diablo 3.
Duke Nukem
If you look on the nintendo game guide, you can actually see there's going to be a remake of Duke Nukem. It's Called Duke Nukem: Critical Mass.
Pokemon Gold and Silver, the beloved originals! But they are making a remake for DS... so I'm going to get that game! Woot!
I think you are referring to Pokemon: Soul Silver & Pokemon: Heart Gold.
I would play Metal Gear, and Metal Gear: Solid Snake if they were ramde. In which they probably will. (Both were arcade and the first was made in 1984.)
